28 April - Durham Convocation Confirmation Service

The Durham Convocation Confirmation service took place at St. Joseph's Episcopal Church, with Bishop Michael Curry presiding. Heaps of thanks to the choristers from various churches around the convocation who agreed to be a part of this celebration.

Voice Divisional Recital, 22 April 2009

Last Wednesday, I was asked to accompany a friend, who is a Vocal Performance major at UNC Chapel Hill. He wanted me to play the organ as he sang "Draw near, all ye people" from Mendelssohn's Elijah.

The event kind of reminded me of In-House Seminars, except instead of graduate students giving lectures to each other, we have undergraduate students singing pieces for each other. It seemed like a really nice, supportive atmosphere, and with this being the last Wednesday recital of the current academic year, every singer received a standing ovation.

Before the program started, the students presented a plaque to Professor Stafford Wing in appreciation for his teaching throughout his long and distinguished career. The group hug at the end was very endearing.

Also too, we were informed that the Rev Nils Chittenden has accepted the call to be the new Chaplain at the EC. Hopefully, he'll be arriving in late July, to assume his position the beginning of August. He visited the US last year, wanting to know more about how US universities do their ministries to college students. He rang us up during dinner and we had a lovely conversation, with the students introducing themselves and having a general "get to know you" discussion.

I think our little experiment of using psalm antiphon from Gather and chanting the verses to a psalm tone appears to be working. I've received compliments on my chanting of the psalms, so I believe we're going to do that again whenever my turn comes up to cantor this Mass.

Holy Week and Triduum with the Organ-ic Chemist

I fell so far behind in my posting. I will admit that it was an exhausting week, and I just wanted to rest ... well, after having done a scientific favour for a friend.

I did a flurry of posts, back-dating everything, so even if the dates reflected the days the services took place, there will be a heap of posts imported into Facebook, or flooding my f-list on LJ, etc. And that's okay.

12 April - Easter Day

This post will be back-dated - I've really delayed in getting this up.

Miso soup

I went to an Asian supermarket a couple of days ago, and picked up some vegetables and other items I would not be able to easily pick up at the local supermarkets near me.

Amongst the items I bought: freshly made tofu (5 cakes/$2.00) and Okinawan Sweet Potatoes.

I was in a miso soup mood, and it really is one of the easiest things in the world to make.

2 pcs tofu (or if you get it from the supermarket, one container of it will do.)
3 stalks green onion, chopped (green tops only)
4 c water
4 tsp Hon-Dashi
3-4 tbsp miso paste (red or white, your choice)

Place water and Hon-Dashi in a pot and bring to a boil. While doing that, cut the tofu into cubes. Lower the heat to low and add the tofu. Heat through. Add the green onion and allow to heat for a few minutes.

Remove from heat and add the miso paste. Mix gently to ensure the miso paste is dissolved.

Serve immediately.

I used red miso paste. I've used white in the past. IIRC, the difference between red and white is the amount of time the miso paste was fermented. I believe the red was fermented longer than the white.

By the way, for both the service at St. Joseph's as well as that at Chapel of the Cross, the accompaniment for Herzliebster Jesu was taken from the Hymnal 1940. I'm not sure what the editors of the Hymnal 1982 did with the accompaniment, but I just found it easier to follow in the 1940 as opposed to the 1982. My choristers agreed with me and were happy to make the switch.


Compline at the Chapel of the Cross. We've been using the Order for Compline, as set by David Hurd.

Saturday afternoon in the kitchen

Those of you who have been following me on Facebook or on GTalk know that I've spent the last couple of days converting music written in neumes to modern notation. I'm nearly done with that task, but decided to take a break from all that by puttering 'round in the kitchen.

I had some left-over buttermilk that needed to be used, so I thought of making buttermilk pancakes. Since I had some quickly ripening bananas, I decided to include that in the mix.

So here is the recipe I used:

2 cups all-purpose flour
2 tbsp sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 eggs
2 cups buttermilk
4 tbsp unsalted butter, melted
1 tsp vanilla extract
2 bananas, ripe

Sift together into a bowl the flour, sugar, baking powder, baking soda, and salt. Set aside.

Beat the eggs until frothy. Add the buttermilk, melted butter, and vanilla extract and mix well.

Add the dry ingredients and mix until combined.

Cut the bananas into slices and drop in the batter. Fold the bananas into the batter.

Cook on a lightly greased griddle (I used cooking spray on the surface): pour the batter by 1/4 cup increments. If you want bigger pancakes, increase the amount of batter (1/3 - 1/2 cupfuls).

This recipe made 22 pancakes when 1/4 c batter was cooked on the griddle.

Serve warm with butter, jam, honey, or if you want something more savoury, eggs, bacon, ham, spam, etc.

And just for Arlyn: my Espasol recipe. The secret to successful espasol: you need to toast the malagkit (sweet rice) flour. Most recipes will tell you to roast the malagkit (sweet rice) and then grind it. Why grind when you can easily buy it already ground? I've generally used Mochiko flour, and if you can get the one produced by Koda Farms, that's even better.

Espasol

4 c malagkit flour
1 ½ c sugar
3 c coconut milk
1 tsp vanilla
Pinch of salt

Roast the malagkit flour in an ungreased pan until the flour appears very lightly tan. (I've always been told if it's the colour of my skin, it's too dark.)

Set aside 1 c malagkit flour for later use. Combine the remaining 3 cups of roasted flour with the rest of the ingredients. It's going to be a bit sticky when everything is incorporated.

On a surface dusted with the malagkit flour, roll out the dough until it's around 1/4 - 1/2" thickness. With a cutter (I've generally used a diamond-shaped cutter), cut out the shapes, roll in the flour you set aside and place in a container.

Serve at room temperature.

Guaranteed - if you serve this to a group of Filipinos, especially in a place where these things are not easily bought, they will disappear faster than you can say "boo".

Edited to add:

Oops. I knew I forgot something. My recipe only had the ingredients list, and I had to remember how to put it together.

What I was missing: combine the sugar and coconut milk in a pan. Whilst stirring, bring to a boil over medium heat, and then lower the flame to a simmer. Add the vanilla and the salt.

To this you add the toasted malagkit flour, and keep stirring. Don't burn the mixture, but keep going until it's relatively dry. It should become a pliant material that you can put on a flour board and roll.

After I posted this, I remembered my mum having this sticky mixture in a pot that she was pouring out onto a floured board and realised that I missed this one crucial step.
